Recipe:

Summer Fruit Whipped Ricotta Toast

1 1/2 cup whole milk ricotta cheese

1/4 olive oil (robust)

dash of salt

1/2 cup summer berries such as blueberries and raspberries

Mike’s Hot honey or regular honey for drizzling

In a blender or food processor, add 1 1/2 cup cold whole milk ricotta slowly blend in 1/4 cup olive oil continue blending and add a dash of salt.

Spread over warm crunchy sour dough toast. Top with berries and drizzle honey over the top
